Oven-Baked Salmon with Spinach and Corn Mashed Potatoes
Ingredients:
- 120 grams salmon
- 1 medium-sized potato
- Fresh spinach (amount to taste)
- Corn kernels (amount to taste)
- 100 ml low-fat milk
For the seasoning:
- 7 cloves garlic
- 2 shallots
- 1 chili pepper
- 1 teaspoon salt
Preparation Steps:

Marinate the Salmon:
- Submerge the salmon in water mixed with a bit of crushed garlic and the juice of half a lemon. Allow it to marinate while you prepare the other ingredients.

Prepare the Seasoning:
- Crush all the seasoning ingredients together (garlic, shallots, chili pepper, and salt). Divide the mixture in half; one half will be used for the mashed potatoes and the other half for the salmon.

Make the Spinach and Corn Mashed Potatoes:
- Boil the potato until tender, along with the spinach and corn. Drain them well.
- Mash the boiled potato, spinach, and corn together to your preferred consistency, whether you like it smooth or a bit chunky.
- In a small saucepan, heat the milk. Add half of the seasoning mixture (you can also add a bit of salt and MSG if you’re not avoiding it) and stir well.
- Combine the milk mixture with the mashed potatoes, stirring until well mixed and thickened. Set aside.

Bake the Salmon:
- Rub the salmon with the remaining seasoning mixture and a little olive oil.
- Wrap the seasoned salmon in aluminum foil.
- Bake in a preheated oven at 200°C (approximately 390°F) for about 30 minutes.

Serve:
- Place the baked salmon on a plate and serve it alongside the spinach and corn mashed potatoes.
