Ikan Kembung Rica Rica: A Flavorful Indonesian Delight

Ingredients

For the Fish:

  • 5 mackerel fish (ikan kembung)
  • Juice of 1 lime
  • 3 cloves garlic, minced
  • 2 cm turmeric, minced
  • Salt to taste

For the Spice Paste:

  • 2 cloves garlic
  • 4 shallots
  • 1 cm ginger
  • 1 cm turmeric
  • 1 onion, sliced
  • 2-3 bird’s eye chilies, sliced
  • 1 bay leaf
  • Only the green part of spring onions (daun bawang)
  • 2 tablespoons oyster sauce (Saori)

Instructions

  1. Marinate the Fish: Begin by cleaning the mackerel and placing them in a bowl. Squeeze the juice of one lime over the fish, then add the minced garlic, turmeric, and salt. Mix well to ensure the fish is evenly coated. Allow it to marinate for about 15 minutes, letting the flavors penetrate the fish.

  2. Prepare the Spice Paste: In a blender or food processor, combine the garlic, shallots, ginger, turmeric, and sliced onion to create a smooth paste. Set aside.

  3. Sauté the Spice Mixture: In a large skillet or wok, heat a splash of oil over medium heat. Add the prepared spice paste along with the sliced bird’s eye chilies and bay leaf. Sauté until fragrant, stirring occasionally to prevent burning.

  4. Add Oyster Sauce and Water: Once the spices are fragrant, stir in the oyster sauce and add a little water to create a sauce. Allow it to simmer for a few minutes, then incorporate the chopped green part of the spring onions. Taste and adjust the seasoning as needed.

  5. Combine the Fish with the Sauce: Gently add the marinated mackerel to the pan, mixing them with the spicy sauce. Ensure that each piece of fish is coated well with the rica rica sauce.

  6. Serve: Once the fish is cooked through and has absorbed the rich flavors of the sauce, remove from heat. Serve your Ikan Kembung Rica Rica hot, garnished with additional spring onions if desired. This dish pairs beautifully with steamed rice, making for a delightful meal.
