Title: Ayam Penyet ala Siti’s Recipe
Ingredients:
- 1/2 kg chicken, cut into pieces, washed thoroughly
- 1 tablespoon coriander seeds
- 2 cloves garlic
- 5 shallots
- 1 segment galangal
- 4 pieces bay leaves
- Salt, to taste
- Lime juice, to taste
Sambal Ingredients:
- Red chilies, bird’s eye chilies, to taste
- 1 large red tomato
- Roasted shrimp paste, to taste
- Lime or calamansi, for serving
Steps:
- Blend coriander seeds, garlic, shallots, galangal, and bay leaves into a smooth paste.
- Marinate the chicken with the blended paste until nearly dry.
- Lift and drain excess marinade, then deep-fry the chicken until golden brown and cooked through.
- Pound the fried chicken pieces lightly using a mortar and pestle.
- Prepare the sambal by frying all sambal ingredients until fragrant, then pound into a paste. Pour over the chicken.
- Serve hot with lime or calamansi on the side for squeezing over the dish. Don’t forget to taste and adjust seasoning before serving.
