Prep Time: 30 minutes
Cook Time: 25 minutes
Total Time: 55 minutes
Yield: 8 servings
Ingredients
- 3 eggs, separated
- 1 tsp vanilla extract
- 1/2 cup granulated sugar, divided
- 1/2 tsp salt
- 3/4 cup cake flour
- 1/2 cup granulated sugar (for filling)
- 1/4 cup all-purpose flour
- 1 1/2 cups milk
- 6 egg yolks
- 2 tsp vanilla extract (for filling)
- 1/2 tsp salt (for filling)
- 3 tbsp light corn syrup
- 2 tbsp water
- 4 oz semisweet chocolate
Instructions
-
Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line it with wax paper.
-
Beat egg yolks and vanilla extract in a mixing bowl until blended.
-
Gradually add half of the granulated sugar to the egg yolks, beating until the mixture is thick and pale.
-
In a separate bowl, beat egg whites and salt until soft peaks form. Gradually add the remaining granulated sugar, beating until stiff peaks form.
-
Fold the yolk mixture into the beaten egg whites gently.
-
Sift cake flour over the egg mixture and fold in gently, being careful not to overmix.
-
Pour the batter into the prepared cake pan and bake for about 25 minutes, or until the top springs back lightly when touched.
-
Loosen the cake by running a metal spatula around the sides of the pan. Invert the cake onto a wire rack, remove the pan, and peel off the wax paper. Turn the cake right side up and let it cool completely on the rack.
-
Prepare the filling: In a saucepan, mix together 1/2 cup granulated sugar and all-purpose flour. Gradually whisk in milk, then add egg yolks, vanilla extract, and salt.
-
Bring the mixture to a boil over medium heat, stirring constantly. Boil for 1 minute, then strain through a fine sieve into a bowl. Press plastic wrap onto the surface of the filling and chill for 30 minutes.
-
Assemble the cake: Using a serrated knife, carefully cut the cake horizontally in half. Place the bottom layer on a serving plate and spread evenly with the chilled filling. Top with the remaining cake layer.
-
Prepare the glaze: In a saucepan, bring 1/2 cup granulated sugar, light corn syrup, and water to a boil over low heat, stirring constantly until the sugar has dissolved. Remove from heat and add the semisweet chocolate. Let stand for 1 minute, then whisk until smooth.
-
Pour the glaze gradually over the assembled cake, allowing it to drip down the sides. Let the glaze set.
-
