Crispy Ayam Krispy with Sambal Matah

Ingredients:

For Crispy Chicken:

  • 2 chicken thighs
  • 1 medium-sized packet of seasoning flour (any brand)
  • 1 egg
  • 1 lime
  • Salt, pepper, seasoning (to taste)

For Sambal Matah:

  • 10 shallots
  • 2 bird’s eye chilies (adjust to taste)
  • 1/2 tsp shrimp paste (terasi)
  • 2 tbsp cooking oil
  • 1 lime
  • Salt, sugar, seasoning (to taste)

Instructions:

  1. Prepare the Chicken:

    • Make two incisions into each chicken thigh to ensure even cooking. Season with salt, pepper, and seasoning to taste. Squeeze lime juice over the chicken and let it marinate briefly.
  2. Prepare Sambal Matah:

    • Peel and thinly slice the shallots and bird’s eye chilies. Place them in a small bowl and sprinkle with a pinch of salt, sugar, and seasoning. Set aside.
    • Heat cooking oil in a pan, add shrimp paste (terasi), and stir until fragrant and the oil is hot. Pour this mixture over the sliced shallots and chilies. Squeeze lime juice over it, mix well. Sambal Matah is ready, set aside.
  3. Coat and Fry the Chicken:

    • In separate bowls, place beaten egg and seasoning flour. Heat oil in a frying pan for deep frying.
    • Dip each chicken thigh into the beaten egg, then coat evenly with the seasoning flour. Repeat this process (egg then flour) once more for a double coating.
    • Fry the chicken over low heat to ensure it cooks through, about 20-30 minutes until crispy and cooked inside.
  4. Serve:

    • Once the chicken is golden brown and crispy, remove from the oil and drain on paper towels.
    • Arrange the crispy chicken on a serving plate and generously sprinkle with prepared Sambal Matah.
    • Serve immediately and enjoy your Crispy Ayam Krispy with Sambal Matah!
