Ayam Mentega (Butter Chicken Wings)

Ingredients:

  • 1/2 kg chicken wings
  • 6 shallots
  • 4 garlic cloves
  • Large red chilies
  • Galangal (Laos)
  • Pepper
  • Sugar
  • Salt
  • 1 tablespoon oyster sauce
  • 1 tablespoon butter
  • Spring onions
  • Sweet soy sauce

Instructions:

  1. Prepare the Chicken Wings: Begin by frying the chicken wings until they are half-cooked. Once done, drain and set aside.

  2. Sauté the Aromatics: In a large pan, heat a bit of oil and sauté the shallots, garlic, and galangal until they are fragrant and golden.

  3. Combine with Chicken: Add the previously fried chicken wings to the pan. Stir well to coat the chicken wings with the aromatic mixture.

  4. Season and Simmer: Pour in enough water to cover the chicken wings. Season with pepper, sugar, salt, sweet soy sauce, and oyster sauce to taste. Let the mixture simmer, allowing the flavors to meld together and the chicken to cook thoroughly.

  5. Finishing Touches: As the water begins to reduce, add 1 tablespoon of butter to the pan. Stir well until the butter has melted and coated the chicken wings. Add the chopped spring onions and stir to combine. Adjust the seasoning if necessary.

  6. Serve: Once the sauce has thickened and the chicken wings are fully cooked, remove from heat and serve hot. Enjoy your Ayam Mentega with steamed rice or as part of a larger meal.

Tips:

  • For extra flavor, you can marinate the chicken wings in a mixture of soy sauce, garlic, and a bit of sugar before frying.
  • Adjust the amount of chili to suit your spice preference. If you like it spicier, add more red chilies or include some bird’s eye chilies.
  • Galangal can be found in Asian markets, but if unavailable, you can substitute with ginger for a slightly different flavor.
