Spicy Sweet Soy Chicken (Ayam Kecap Pedas)
Ingredients:
- 100 grams chicken breast
- 2 cloves garlic
- 1 gendot chili pepper
- 3 bird’s eye chili peppers (adjust to taste)
- 1 tablespoon bottled chili sauce (I used Indofood brand)
- 1 tablespoon sweet soy sauce (kecap manis)
- Salt, sugar, and pepper to taste
- 1 cup water

Cook the Chicken: Begin by boiling the chicken breast until fully cooked. Once cooked, let it cool down before shredding it into bite-sized pieces. Set aside.

Prepare the Aromatics: In a pan, sauté the minced garlic, gendot chili pepper, and bird’s eye chili peppers until they start to soften and release their fragrant aroma.

Combine the Chicken and Aromatics: Add the shredded chicken to the pan with the sautéed aromatics. Stir to combine and ensure the chicken is evenly mixed with the garlic and chili peppers.

Add the Sauces and Seasonings: Pour in the water and add the salt, sugar, pepper, bottled chili sauce, and sweet soy sauce. Stir well to combine all the ingredients.

Simmer and Reduce: Allow the mixture to simmer, stirring occasionally, until the water has mostly evaporated and the sauce has thickened, coating the chicken pieces. Taste and adjust the seasoning if needed.

Serve: Remove from heat and transfer to a serving dish. Serve the spicy sweet soy chicken hot with a side of warm steamed rice.
