Indonesian Chicken Noodles with Sweet Soy Sauce (Mie Ayam Abang2)
Ingredients:

For Chicken in Sweet Soy Sauce:
- 2 chicken breasts, diced
- 1 segment galangal, bruised
- 1 segment ginger, bruised
- 1 bay leaf
- 2 kaffir lime leaves
- 1.5 tbsp sweet soy sauce
- 1/2 tsp sugar, or to taste
- Salt, to taste

Ground Spices for Chicken:
- 3 shallots
- 3 cloves garlic
- 1/4 tsp pepper
- 1 segment turmeric, or turmeric powder
- 1 tsp roasted coriander seeds
- 1 candlenut
- 1 lemongrass stalk, white part only

Chicken Oil:
- 6 tbsp cooking oil
- 2 cloves garlic
- Chicken skin, as needed

Soup:
- Water, as needed
- Chicken bones
- Salt, to taste
- Scallions, chopped

Sambal:
- 10 red bird’s eye chilies
- 2 red curly chilies
- 1 clove garlic
- 1/4 tsp salt

Accompaniments:
- 3 portions of noodles, boiled
- Chinese mustard greens, sliced and boiled
- Scallions, sliced
- Sambal sauce
Instructions:

Chicken in Sweet Soy Sauce:
- Sauté ground spices, bay leaf, kaffir lime leaves, ginger, and galangal.
- Add chicken and sauté until chicken changes color. Add sweet soy sauce, water, sugar, and salt.
- Cook until chicken is tender and the sauce reduces.

Chicken Oil:
- Heat a pan, add cooking oil, garlic, and chicken skin. Cook until the skin and garlic are crispy.

Soup:
- Boil water in a pot. Reduce heat, add chicken bones, and simmer until the broth is flavorful. Season with salt and add chopped scallions before turning off the heat.

Sambal:
- Boil red chilies and garlic until cooked. Add salt and blend into a paste.

Assembly:
- Prepare serving bowls. Add 2 tablespoons of chicken oil and toss in the boiled noodles.
- Arrange Chinese mustard greens, chicken in sweet soy sauce, sambal, and sambal sauce. Finally, sprinkle with sliced scallions and serve with soup.
