Indonesian Chicken Noodles with Sweet Soy Sauce (Mie Ayam Abang2)

  1. Chicken in Sweet Soy Sauce:

    • Sauté ground spices, bay leaf, kaffir lime leaves, ginger, and galangal.
    • Add chicken and sauté until chicken changes color. Add sweet soy sauce, water, sugar, and salt.
    • Cook until chicken is tender and the sauce reduces.
  2. Chicken Oil:

    • Heat a pan, add cooking oil, garlic, and chicken skin. Cook until the skin and garlic are crispy.
  3. Soup:

    • Boil water in a pot. Reduce heat, add chicken bones, and simmer until the broth is flavorful. Season with salt and add chopped scallions before turning off the heat.
  4. Sambal:

    • Boil red chilies and garlic until cooked. Add salt and blend into a paste.
  5. Assembly:

    • Prepare serving bowls. Add 2 tablespoons of chicken oil and toss in the boiled noodles.
    • Arrange Chinese mustard greens, chicken in sweet soy sauce, sambal, and sambal sauce. Finally, sprinkle with sliced scallions and serve with soup.
