Spiced Apple Jelly Recipe

Overview

This delightful Spiced Apple Jelly is a perfect blend of tart apples and warm spices, making it an ideal spread for your morning toast or as a thoughtful homemade gift. The cooking time can vary slightly depending on the pectin levels in the apples used, but the results are always worth it!

  • Prep Time: 10 minutes
  • Cook Time: 25 minutes
  • Total Time: 35 minutes
  • Yield: Approximately 4 1/2 pint jars

Ingredients

  • 2 1/2 pounds green apples (peelings/cores)
  • 1 teaspoon ground mace
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon
  • 4 cups water
  • 2 cups sugar

Instructions

  1. Prepare the Apple Juice:

    • Place the apple peelings and cores in a large pot. Add ground mace, ground cloves, ground cinnamon, and water just enough to cover the apples.
    • Cook over medium heat for 10-15 minutes until the apples are soft and the flavors infuse into the water.
  2. Strain the Juice:

    • Once the apples are cooked, strain the mixture through a jelly bag or cheesecloth. You should have approximately 2 1/2 to 3 cups of apple juice.
  3. Cooking the Jelly:

    • Return the strained apple juice to the pot. Add sugar and stir until it dissolves completely.
    • Cook over medium-high heat, stirring frequently, until the mixture reaches the jellying point. This is when a spoonful of the liquid dropped onto a cold plate forms a gel-like consistency.
  4. Skim Away Froth:

    • During cooking, skim away any foam that forms on the surface of the jelly. This helps to clarify the jelly and improve its texture.
  5. Packaging:

    • While the jelly is hot, carefully pour it into hot sterilized jars, leaving about 1/4 inch of headspace. Seal the jars tightly.
  6. Storage:

    • Store the sealed jars in a cool, dark place. The jelly will continue to set as it cools.
  7. Enjoy:

    • This Spiced Apple Jelly makes approximately four 1/2 pint jars, ready to be enjoyed or shared with loved ones.

Notes

  • This recipe yields a jelly that beautifully captures the essence of fresh apples with a hint of warming spices.
  • Adjust the sweetness by varying the amount of sugar to suit your taste preference.
  • Ensure jars are properly sterilized before filling to maintain freshness and quality.

Prepare this Spiced Apple Jelly recipe and savor the rich flavors spread over toast, paired with cheeses, or as a delightful addition to your favorite recipes. It’s a homemade treat that embodies comfort and warmth in every jar.
