Ikan Kerapu Bumbu Pedas

Ingredients:

  • 1 grouper fish, cut into desired pieces
  • 1 lime
  • Salt to taste

Spice Paste:

  • 2 small red tomatoes
  • 25 red bird’s eye chilies
  • 10 red chilies
  • 6 shallots
  • 4 garlic cloves
  • 1/2 onion
  • 1/2 teaspoon shrimp paste

Complementary Ingredients:

  • 3 red chilies, sliced diagonally
  • 10 green bird’s eye chilies
  • 1 stalk of green onion, sliced lengthwise
  • 1 carrot, thinly sliced diagonally
  • 1/2 onion, sliced into rings
  • Salt, sugar, and pepper to taste
  • 1 tablespoon chili sauce

Preparation Steps:

  1. Prepare the Fish:

    • Clean the grouper fish thoroughly, rinse with water, and drain.
    • Squeeze the juice of the lime over the fish and sprinkle with salt to taste. Let it sit for a while to marinate.
  2. Fry the Fish:

    • Heat oil in a frying pan and fry the fish until it is slightly crispy. Remove from the pan and set aside to drain excess oil.
  3. Cook the Spice Paste:

    • In a separate pan, heat a little oil and sauté the sliced onion until fragrant.
    • Add the spice paste (blend the tomatoes, bird’s eye chilies, red chilies, shallots, garlic, onion, and shrimp paste into a smooth mixture) and stir well until the paste is well-cooked and aromatic.
  4. Season and Add Vegetables:

    • Season the mixture with salt, sugar, pepper, and chili sauce.
    • Add a little water to the pan, followed by the carrot slices. Cook until the carrots start to soften.
  5. Combine with Fish:

    • Add the fried fish to the pan, stirring gently to coat the fish evenly with the spice mixture. Add a bit more water if necessary to help the flavors meld.
    • Let the fish simmer in the spice mixture until the flavors are absorbed.
  6. Final Touches:

    • Add the sliced red chilies, green bird’s eye chilies, and green onion. Stir gently to avoid breaking the fish pieces.
    • Adjust the seasoning to taste.
  7. Serve:

    • Remove from heat and serve immediately with warm white rice.
