Ingredients

For the Fish:

  • 5 curly red chilies (cabe merah kriting)
  • 5 shallots (bawang merah)
  • 3 cloves garlic (bawang putih)
  • 3 candlenuts (kemiri)
  • 1 piece turmeric (kunyit)
  • 1 piece ginger (jahe)
  • Brown sugar, to taste
  • Salt, to taste

Additional Ingredients:

  • 3 medium tomatoes, quartered
  • 4 bay leaves (daun salam)
  • Tamarind (optional)

Instructions

  1. Prepare the Fish: Start by thoroughly cleaning the bandeng fish, ensuring that the scales and belly are properly cleaned. Cut the fish into several portions, rinse under cold water, and place them in a clean frying pan.

  2. Make the Spice Paste: In a blender or mortar and pestle, combine all the ingredients for the spice paste—green chilies, bird’s eye chilies, curly red chilies, shallots, garlic, candlenuts, turmeric, and ginger. Blend or grind until you achieve a smooth paste. Once ready, evenly coat the fish with the spice mixture.

  3. Cook the Fish: Add just enough water to the pan to cover the fish. Place the bay leaves on top of the fish for added flavor. Cook over high heat until the mixture comes to a boil. Taste and adjust seasoning with brown sugar and salt as needed.

  4. Add Tomatoes: As the water reduces, gently add the quartered tomatoes to the pan. Continue cooking until only a small amount of liquid remains, allowing the fish to absorb all the wonderful flavors.
