15 Minute Mandarin Orange Salad

Overview:

This delightful Mandarin Orange Salad is a cherished family recipe, a staple at our holiday gatherings. I’ve adapted it to be sugar-free and low-fat, but you can opt for the full-fat versions of cream cheese and Cool Whip for a richer taste. It’s a versatile dish that can be adjusted for thicker or thinner servings based on your dish size preference.

  • Preparation Time: 15 minutes
  • Total Time: 15 minutes
  • Serves: 12

Ingredients:

  • 1 cup boiling water
  • 1 package (8 oz) cream cheese
  • 1 can (15 oz) mandarin oranges, drained
  • 1 can (8 oz) crushed pineapple, drained
  • 1 tub (8 oz) Cool Whip Free

Instructions:

  1. Prepare Jello Mixture:

    • Dissolve the Jello in 1 cup of boiling water. Let it cool slightly.
  2. Combine Cream Cheese:

    • In a mixing bowl, add the softened cream cheese. Beat until smooth and well combined with the Jello mixture.
  3. Add Fruits:

    • Drain the mandarin oranges and crushed pineapple well. Combine them with the cream cheese mixture.
  4. Fold in Cool Whip:

    • Gently fold in the Cool Whip Free until evenly incorporated into the fruit and cream cheese mixture.
  5. Chill:

    • Transfer the salad into a Pyrex or another glass casserole dish. Chill in the refrigerator, ideally overnight for the flavors to meld and the salad to set.
  6. Serve:

    • Serve the Mandarin Orange Salad cold, enjoying its refreshing citrus flavors.

Tips:

  • For a thicker consistency, use a smaller dish. For a lighter, thinner texture, opt for a larger dish.
  • This salad is perfect for holidays, brunches, or any occasion where you want a sweet and fruity dessert that’s quick to prepare.
