Ingredients:
- 4 chicken breast halves
- 1 onion, chopped
- 1 celery rib, chopped
- 2 tbsp butter, divided
- 2 tbsp all-purpose flour
- 2 tsp minced garlic, divided
- 2 cups chicken broth
- 1/2 tsp ground sage
- 4 baking potatoes
- 1/2 cup nonfat plain yogurt
Instructions:

Poach the Chicken:
- In a large sauté pan, heat enough water to cover the chicken breasts.
- Optionally, add 1 cup of dry white wine or seasoning to the water for extra flavor.
- Bring the water to a low simmer and add the chicken breasts.
- Cook the chicken breasts partially covered until they are firm to the touch. Be careful not to boil the liquid.
- Remove the chicken breasts from the pan and cube them. Set aside.

- Preheat your oven to 375°F (190°C).
- In the same pan, melt 1 tablespoon of butter over medium heat.
- Add the chopped onion and celery, and cook until they are tender.

- Sprinkle the flour over the onion and celery mixture, stirring constantly for about 2 minutes.
- Add 1 teaspoon of minced garlic and pour in the chicken broth.
- Stir well to combine, making sure there are no lumps from the flour.
- Add the ground sage and simmer the mixture for 5 minutes until it thickens slightly.

- Stir in the remaining teaspoon of minced garlic and the cubed chicken.
- Pour the chicken mixture into a baking dish, spreading it evenly.

- Meanwhile, peel and cube the baking potatoes.
- Boil or steam the potatoes until they are tender.
- Drain the potatoes and mash them with the nonfat plain yogurt, the remaining tablespoon of butter, and any remaining minced garlic until smooth and creamy.

- Spoon the mashed potato mixture over the chicken filling in the baking dish, spreading it out to cover evenly.
- Place the dish in the preheated oven and bake for 30 minutes, or until the top is golden brown and the filling is bubbly around the edges.
