Ingredients:

  • 4 chicken breast halves
  • 1 onion, chopped
  • 1 celery rib, chopped
  • 2 tbsp butter, divided
  • 2 tbsp all-purpose flour
  • 2 tsp minced garlic, divided
  • 2 cups chicken broth
  • 1/2 tsp ground sage

Instructions:

  1. Poach the Chicken:

    • In a large sauté pan, heat enough water to cover the chicken breasts.
    • Optionally, add 1 cup of dry white wine or seasoning to the water for extra flavor.
    • Bring the water to a low simmer and add the chicken breasts.
    • Cook the chicken breasts partially covered until they are firm to the touch. Be careful not to boil the liquid.
    • Remove the chicken breasts from the pan and cube them. Set aside.
  2. Prepare the Filling:

    • Preheat your oven to 375°F (190°C).
    • In the same pan, melt 1 tablespoon of butter over medium heat.
    • Add the chopped onion and celery, and cook until they are tender.
  3. Make the Sauce:

    • Sprinkle the flour over the onion and celery mixture, stirring constantly for about 2 minutes.
    • Add 1 teaspoon of minced garlic and pour in the chicken broth.
    • Stir well to combine, making sure there are no lumps from the flour.
    • Add the ground sage and simmer the mixture for 5 minutes until it thickens slightly.
  4. Combine and Bake:

    • Stir in the remaining teaspoon of minced garlic and the cubed chicken.
    • Pour the chicken mixture into a baking dish, spreading it evenly.
  5. Prepare the Potato Topping:

    • Meanwhile, peel and cube the baking potatoes.
    • Boil or steam the potatoes until they are tender.
    • Drain the potatoes and mash them with the nonfat plain yogurt, the remaining tablespoon of butter, and any remaining minced garlic until smooth and creamy.
  6. Assemble and Bake:

    • Spoon the mashed potato mixture over the chicken filling in the baking dish, spreading it out to cover evenly.
    • Place the dish in the preheated oven and bake for 30 minutes, or until the top is golden brown and the filling is bubbly around the edges.
  7. Serve:

    • Remove from the oven and let it cool slightly before serving.
