  1. Prepare the Sambel:

    • Begin by crushing the bird’s eye chili peppers, red chili peppers, garlic, and shallot using a mortar and pestle until they form a coarse paste.
    • Heat a small amount of oil in a pan until it’s sizzling hot.
    • Carefully pour the hot oil over the sambel paste, mixing well to combine all the flavors. Season with salt and sugar to taste.
  2. Combine the Chicken and Sambel:

    • Place the fried crispy chicken fillet on a plate.
    • Using a pestle or a suitable kitchen tool, gently press (or “penyet”) the chicken onto the sambel to ensure it absorbs the spicy sauce, making sure it’s well coated and slightly crushed.
  3. Serve:

    • Serve the Ayam Geprek Manyuss immediately with a side of steaming hot rice.
    • Enjoy your spicy, flavorful meal!
