Ayam Pop Ala-Ala
Ingredients
- 1/2 kg chicken, cut into pieces
- 2 coconut water
- Ground spices:
- 4 cloves garlic
- 4 shallots
- Candlenut
- Ginger
- Additional spices:
- 3 bay leaves
- 5 kaffir lime leaves
- Galangal
- 2 stalks lemongrass
- Salt and sugar to taste
Instructions
-
Prepare the Ingredients:
Begin by arranging the additional spices (bay leaves, kaffir lime leaves, galangal, and lemongrass) in your cooking pot. Place the chicken pieces over the spices. -
Add Ground Spices:
Add the ground spices (garlic, shallots, candlenut, and ginger) to the pot, ensuring they are evenly distributed over the chicken. -
Marinate with Coconut Water:
Pour the coconut water over the chicken and spices, making sure the chicken is fully submerged. Let the chicken marinate in the coconut water and spices for a richer flavor. -
Cook the Chicken:
Cook the chicken over medium heat. Allow the mixture to simmer until the liquid reduces significantly. Stir occasionally to ensure even cooking. Add salt and sugar to taste and adjust the seasoning as needed. -
Fry the Chicken:
Once the liquid has mostly evaporated and the chicken is cooked through, remove the chicken from the pot. For an extra layer of flavor and texture, briefly fry the chicken in hot oil for about 10 seconds until it is golden brown. Remove and drain the chicken on paper towels. -
Save the Remaining Coconut Water:
Do not discard the remaining coconut water used to marinate the chicken. This flavorful liquid can be used to boil cassava leaves or other greens, providing a delicious side dish to accompany your Ayam Pop. -
Serve and Enjoy:
Serve the chicken hot with your preferred sambal (spicy chili paste) and boiled greens for a complete meal. Enjoy your Ayam Pop Ala-Ala!
Tips
- Frying Time: Ensure you do not fry the chicken for too long to maintain its juiciness.
- Flavorful Broth: Use the leftover coconut water broth creatively to enhance other dishes, making sure no flavor goes to waste.
