Indonesian Sweet Soy Chicken and Tofu Stew
Indonesian Chicken and Tofu Stew (Ayam Kecap/Semur)
Ingredients:
- 4 pieces of chicken (thighs and drumsticks)
- 6 chicken feet (optional)
- 8 pieces of fried tofu
- 1/2 large onion, thinly sliced
- 1 tomato, finely sliced
Spices:
- 1 tbsp minced garlic
- 1 tbsp minced shallots
- 1 small piece of ginger, minced
- Sweet soy sauce (kecap manis), to taste
- A dash of oyster sauce
- Ground white pepper
- Ground nutmeg
Instructions:

Fry the Chicken and Tofu: Begin by frying the chicken and tofu until golden brown. Set aside once done.

Sauté the Aromatics: In the same pan, sauté the minced garlic, shallots, and ginger until fragrant.

Add Chicken and Tofu: Add the fried chicken and tofu into the pan. Pour in sweet soy sauce and a dash of oyster sauce. Stir well.

Pour in Water: Add enough water to cover the chicken and tofu.

Incorporate Onion and Tomato: Stir in the sliced onion and tomato.

Seasoning: Season with ground white pepper and nutmeg according to taste. Stir everything together thoroughly.

Simmer Until Flavorful: Allow the stew to simmer until the chicken and tofu absorb the flavors of the spices and sauce.
