Soft Coffee Molasses Crackle Cookies

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/4 teaspoons ground ginger
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground nutmeg
  • 1 cup dark brown sugar, packed
  • 1/2 cup shortening
  • 1/2 cup molasses
  • 1 tablespoon instant coffee granules
  • 1 tablespoon water
  • 1 egg
  • 1 1/2 teaspoons vanilla extract
  • Granulated sugar (for rolling)

Instructions:

  1. Prepare the Dough:

    • In a bowl, combine flour, baking soda, ginger, salt, and nutmeg. Set aside.
    • Using medium speed on an electric mixer, beat together brown sugar and shortening until fluffy.
    • Beat in molasses until just blended.
    • Dissolve instant coffee in water and add to the brown sugar mixture.
    • Add egg and vanilla extract; beat just until blended.
    • Stir in the flour mixture just until combined.
  2. Chill the Dough:

    • Cover the dough and refrigerate until firm, about 4 hours or overnight.
  3. Shape and Bake:

    • Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper or lightly grease them.
    • Shape the chilled dough into 1-inch balls (about 1 tablespoon of dough each).
    • Roll each ball in granulated sugar to coat evenly.
    • Place the balls 2 inches apart on the prepared baking sheets.
  4. Bake:

    • Bake in the preheated oven for 12-14 minutes, or until the cookies are crackled on top.
    • The cookies will be soft to the touch; do not overbake.
  5. Cool and Store:

    • Let the cookies stand on the baking sheets for 1 minute, then transfer them to a wire rack to cool completely.
    • Store the cooled cookies in an airtight container at room temperature. They can also be frozen for longer storage.
