These delightful Spinach & Cheese Stuffed Mushrooms are a cherished recipe passed down from our Pastor’s wife, perfect for any gathering or holiday feast. Bursting with savory flavors, they’re sure to become a favorite appetizer among your family and friends!
Ingredients:
- 12 large mushrooms
- 1 tbsp olive oil
- 1 tbsp butter
- 1/2 cup finely chopped onion
- 2 tbsp chopped walnuts
- 3 garlic cloves, minced
- 5 cups fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 2/3 cup shredded gruyere cheese
- 1 tbsp dried dill weed
- Salt and pepper, to taste
Instructions:

Prepare the Mushrooms:
- Preheat the oven to 400°F (200°C). Clean the mushrooms and remove the stems. Set aside.

Prepare the Filling:
- In a large skillet, heat olive oil and butter over medium heat. Add chopped onion and sauté until translucent.

Add Nuts and Garlic:
- Stir in chopped walnuts and minced garlic. Cook for about one minute until fragrant.

Cook the Spinach:
- Add the chopped spinach to the skillet. Cook, stirring frequently, until the spinach is wilted and cooked down, about five minutes. Remove from heat and let cool slightly.

- In a mixing bowl, combine the cooked spinach mixture with crumbled feta cheese, shredded gruyere cheese, and dried dill weed. Season with salt and pepper to taste. Mix well until all ingredients are thoroughly combined.
