Ingredients

  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon dried sage
  • 1/4 teaspoon dried parsley
  • 40 cloves garlic, peeled
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 whole frying chicken (about 4 – 4 1/2 pounds)
  • 2 stalks celery, cut into pieces
  • 1 cup chicken broth

Instructions

  1. In a small bowl, mix together thyme, rosemary, sage, and parsley.

  2. Season the inside and outside of the chicken with the herb mixture, salt, and pepper.

  3. Place the celery pieces at the bottom of the crockpot.

  4. Stuff the chicken cavity with about 15 cloves of garlic.

  5. Arrange the chicken in the crockpot, and scatter the remaining garlic cloves around it.

  6. Pour chicken broth over the chicken.

  7. Cover and cook on low for 8-10 hours or on high for 4-6 hours, until the chicken is tender and cooked through.

  8. Serve hot, spooning some of the garlic and juices from the crockpot over each portion.
