Ingredients
- 1 kg Ikan Patin fillet (marinated with lime juice and salt)
- 4 pieces Daun Salam (Indonesian bay leaves)
- 5 pieces Daun Jeruk (lime leaves)
- 2 inches Lengkuas, bruised (galangal)
- 1 Tomato, cut into 8 wedges
- 1 stalk Daun Bawang, chopped into 2 cm pieces (green onion)
- 1 Potato, cut into 8 pieces and fried until golden brown
- 8 pieces Cabe Rawit (bird’s eye chilies)
- Salt (to taste)
- Sugar (to taste)
- Mushroom broth (to taste)
Ground Spice Mixture
- 8 cloves Bawang Merah (shallots)
- 4 cloves Bawang Putih (garlic)
- 2 cm Kunyit, roasted (turmeric)
- 4 pieces Kemiri, roasted (candlenuts)
- 5 pieces Kluwek (black nuts) — break open and soak the flesh in warm water for 15-30 minutes, then extract the pulp

Prepare the Fish: In a hot pan, quickly fry the marinated Ikan Patin fillets just until they change color. Remove from the heat and set aside.

Sauté the Spices: In the same pan, sauté the ground spice mixture along with the daun salam, daun jeruk, cabe rawit, and lengkuas until fragrant and fully cooked.
