Ingredients:

  • 2 onions, finely chopped
  • 1 garlic bulb, minced
  • 2 tablespoons fresh ginger, grated
  • 1 pound leftover pork roast, cut into chunks
  • 2 tomatoes, diced
  • 1 teaspoon turmeric
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground fenugreek
  • 1 pound new potatoes, quartered
  • 1/2 cup peas
  • 4 cups chicken stock
  • Salt and pepper to taste
  • Peanut oil for sautéing

Instructions:

  1. Sauté Aromatics:

    • In a large heavy Dutch oven, heat peanut oil over medium heat. Add chopped onions, minced garlic, and grated ginger. Sauté until fragrant and onions are translucent, about 5 minutes.
  2. Cook Pork:

    • Increase heat to medium-high. Add the chunks of pork roast to the pot. Cook, stirring occasionally, until the pork is golden brown on all sides, about 5 minutes.
  3. Add Tomatoes and Spices:

    • Stir in the diced tomatoes, turmeric, curry powder, ground cumin, and ground fenugreek. Pour in the chicken stock. Bring to a boil.
  4. Simmer:

    • Reduce the heat to low, cover the pot, and simmer for 1 hour, or until the pork is tender.
  5. Add Potatoes:

    • Add the quartered new potatoes to the stew. Cover and cook for an additional 15 minutes, or until the potatoes are fork-tender.
  6. Add Peas:

    • Stir in the peas and cook for an additional 5 minutes, until heated through.
  7. Season and Serve:

    • Season the stew with salt and pepper to taste. Serve hot, garnished with fresh herbs if desired.
