Ingredients:
- 2 onions, finely chopped
- 1 garlic bulb, minced
- 2 tablespoons fresh ginger, grated
- 1 pound leftover pork roast, cut into chunks
- 2 tomatoes, diced
- 1 teaspoon turmeric
- 2 teaspoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground fenugreek
- 1 pound new potatoes, quartered
- 1/2 cup peas
- 4 cups chicken stock
- Salt and pepper to taste
- Peanut oil for sautéing
Instructions:

Sauté Aromatics:
- In a large heavy Dutch oven, heat peanut oil over medium heat. Add chopped onions, minced garlic, and grated ginger. Sauté until fragrant and onions are translucent, about 5 minutes.

- Increase heat to medium-high. Add the chunks of pork roast to the pot. Cook, stirring occasionally, until the pork is golden brown on all sides, about 5 minutes.

- Stir in the diced tomatoes, turmeric, curry powder, ground cumin, and ground fenugreek. Pour in the chicken stock. Bring to a boil.
