Cook Time: 20 minutes
Total Time: 1 hour
Servings: 8
Ingredients:
- 1/4 cup cucumber, grated
- 1/4 cup jaggery, finely chopped
- 1/4 tsp anise seed
- 1/4 cup grated coconut
- 1/2 – 1 cup burghul (cracked wheat)
Instructions:
-
Prepare the Ingredients:
- Start by grating the cucumber and finely chopping the jaggery. Grate the coconut if not already grated.
-
Mixing:
- In a large bowl, combine the grated cucumber, chopped jaggery, anise seed, grated coconut, and burghul. Mix well until all ingredients are evenly distributed.
-
Resting Time:
- Set the mixture aside for 30 minutes to 1 hour. This allows the flavors to meld together and the burghul to absorb some moisture.

Steaming:
- After resting, transfer the mixture into a steaming vessel suitable for a pressure cooker.
-
Cooking:
- Steam the burghul mixture in the pressure cooker for 20 minutes.
-
Finishing:
- Once steamed, remove from heat. The burghul should be tender and infused with the flavors of cucumber, jaggery, and coconut.
-
Serving:
- Serve the steamed burghul warm as a delightful Indian vegan dish. It’s perfect as a side or a light meal on its own.
