Balado Ikan Kembung: A Spicy Indonesian Delight

  • 2 Mackerel Fish (ikan kembung banjar), cleaned and cut into 4 pieces
  • 8 Shallots (bawang merah)
  • 5 Cloves of Garlic (bawang putih)
  • 1/2 Tomato (tomat)
  • 10 Curly Red Chilies (cabe merah keriting)
  • 5 Bird’s Eye Chilies (cabe rawit)
  • 1 Lemongrass Stalk (serai), smashed
  • Salt (secukupnya)
  • Sugar (secukupnya)
  • Seasoning (secukupnya)
  • Cooking Oil (approximately 5 tablespoons for blending and frying)

Preparation Steps:

  1. Prepare the Fish: Begin by thoroughly cleaning the mackerel fish, then slice each fish into two pieces, resulting in four portions. Fry these pieces in hot oil until they are crispy and golden brown. Set aside.

  2. Make the Spice Paste: In a blender or mortar and pestle, combine the shallots, garlic, red chilies, and tomato. Add around 5 tablespoons of cooking oil to facilitate blending. Blend or grind until you achieve a smooth paste.

  3. Cook the Spice Mixture: In a frying pan, heat a little more oil and add the blended spice paste. Sauté the mixture until it becomes fragrant, releasing the beautiful aromas of the spices.

  4. Season the Mixture: Add the smashed lemongrass to the pan, followed by salt, sugar, and seasoning to taste. Stir well and check the flavors, adjusting as necessary.

  5. Combine with Fish: Gently add the fried fish pieces to the pan. Pour in a small amount of water, enough to create a light sauce. Carefully mix everything together, ensuring the fish is well-coated with the spicy sauce.

  6. Cook to Perfection: Allow the dish to simmer until the sauce has thickened and reduced slightly, making sure the fish absorbs the wonderful flavors. Once the sauce has thickened to your liking, turn off the heat.
