Crispy & Sweet Blackberry Cobbler Recipe

Ingredients:

  • 1/2 cup butter
  • 1 1/2 cups sugar
  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 cup milk
  • 24 ounces blackberries
  • 1 1/4 cups sugar (for cooking blackberries)
  • 1/2 cup light brown sugar
  • 3 1/2 tablespoons walnuts, chopped
  • 1 1/2 tablespoons all-purpose flour
  • 2 tablespoons butter, melted

Instructions:

  1. Preheat the oven to 350°F (175°C). Melt 1/2 cup of butter in a 9×13-inch glass baking dish in the preheated oven.

  2. In a mixing bowl, combine 1 1/2 cups of sugar, 1 3/4 cups of flour, and baking powder. Stir well.

  3. Gradually add milk to the dry ingredients, whisking lightly until smooth.

  4. Pour the batter evenly over the melted butter in the baking dish.

  5. In a saucepan over medium heat, combine blackberries and 1 1/4 cups of sugar. Cook until the mixture begins to boil, stirring occasionally.

  6. Spoon the cooked blackberries over the batter in the baking dish.

  7. In a separate bowl, mix together light brown sugar, chopped walnuts, 1 1/2 tablespoons of flour, and melted butter until crumbly.

  8. Sprinkle the walnut mixture evenly over the blackberries.

  9. Bake in the preheated oven for about 30 minutes, or until the top is golden brown and the edges are bubbling.

  10. Remove from the oven and let cool slightly before serving.

  11. Serve warm, topped with vanilla ice cream if desired.
