Miss Daisy’s Red Rice Recipe

Ingredients:

  • 4 strips of bacon
  • 1 large yellow onion, chopped
  • 1 stalk of celery, diced
  • 1 green pepper, seeded and diced
  • 2 cups long grain rice
  • 1 can (14.5 oz) crushed tomatoes
  • Salt and pepper, to taste

Instructions:

  1. Prepare Bacon:

    • In a heavy skillet over medium heat, fry bacon until crisp and golden brown, about 10 minutes. Remove bacon from the pan and drain on paper towels. Reserve the grease in the skillet.
  2. Cook Vegetables:

    • Preheat the oven to 350°F (175°C).
    • Add chopped onions, diced celery, and diced green peppers to the bacon grease in the skillet. Reduce heat to medium-low and cook, stirring occasionally, until the vegetables are soft, about 15 minutes.
  3. Cook Rice:

    • Increase the heat to medium. Add the long grain rice to the skillet with the vegetables and cook, stirring constantly, for 5 minutes.
  4. Combine and Bake:

    • Stir in the crushed tomatoes and season with salt and pepper to taste.
    • Transfer the rice mixture to a large baking dish. Add 2 cups of water and mix well.
    • Cover the baking dish tightly with aluminum foil.
  5. Bake:

    • Place the covered baking dish in the preheated oven and bake for 1 hour, or until the rice is tender and the liquid is absorbed.
  6. Serve:

    • Remove the foil from the baking dish and fluff the rice with a fork.
