Sweet and Sour Spicy Mackerel and Tofu Balado

Ingredients:

  • 1/4 kg Mackerel (Ikan Tongkol)
  • 1 package Firm Tofu (Tahu Kulit), about 10 pieces
  • 4 Orange Chilies (Cabai Orange or Cabai Setan)
  • 4 Shallots (Bawang Merah)
  • 2 cloves Garlic (Bawang Putih)
  • 1 packet Shrimp Paste (Terasi)
  • 1 Tomato (Tomat)
  • Spring Onions and Celery, to taste
  • Salt, Sugar, and Seasoning (to taste)

Instructions:

  1. Prepare the ingredients: clean and wash the mackerel and tofu. Peel and wash all vegetables.

  2. Grind the shallots, garlic, orange chilies, shrimp paste, and tomato into a smooth paste using a mortar and pestle or a food processor.

  3. Cook the mackerel until half-cooked. Similarly, cook the tofu until slightly firm.

  4. In a pan, dry sauté the ground spice paste until fragrant. No oil is needed as the paste contains enough moisture.

  5. Once fragrant, add the half-cooked mackerel and tofu into the pan. Stir well to coat them evenly with the spice paste.

  6. Allow the flavors to infuse. Add water as needed to create a sweet and sour sauce consistency. Season with salt, sugar, and your preferred seasoning to taste. Add chopped spring onions and celery for freshness.

  7. Stir until the sauce thickens and reduces. Transfer to a serving dish.
