Crispy Fried Milkfish (Bandeng Goreng Sederhana)

Ingredients:

  • 2 fresh milkfish (about 2 pounds each)
  • 2 cloves garlic
  • Salt, to taste
  • Whole coriander seeds or ground coriander powder (use as per preference)
  • Water, as needed
  • Cooking oil, for frying

Instructions:

  1. Clean the milkfish by scaling it and cutting into several pieces (I prefer cutting each milkfish into 3-4 pieces).
  2. Rinse the milkfish thoroughly and remove the innards.
  3. Grind the garlic into a fine paste using a mortar and pestle. Mix it with salt, coriander powder (or whole seeds), and enough water to create a marinade.
  4. Marinate the milkfish pieces in the garlic mixture, ensuring they are well coated. Let them sit for about 15 minutes to allow the flavors to penetrate (you can marinate longer for more flavor).
  5. Heat cooking oil in a frying pan over medium heat. Fry the milkfish pieces until they are golden brown and crispy on both sides (flip only after one side is fully cooked to prevent breaking).
  6. Once cooked, remove the fried milkfish from the oil and drain excess oil on paper towels.
  7. Serve the crispy fried milkfish hot and enjoy!

This delightful recipe for Crispy Fried Milkfish brings out the natural flavors of the fish with a simple garlic and coriander marinade, creating a crispy exterior while keeping the inside tender and flavorful. Perfect for a satisfying meal any time of the day!
