Spicy Chicken Feet in Balado Sauce

Ingredients:

  • 500 grams chicken feet, cleaned
  • 1 stalk lemongrass, pounded
  • 2 bay leaves
  • 1 cm galangal, pounded
  • 1 tomato, quartered
  • 1 teaspoon ground white pepper
  • Salt and sugar, to taste
  • Cooking oil for sautéing
  • Water for boiling

Spice Paste:

  • 3 cloves garlic
  • 4 shallots
  • 2 candlenuts
  • 5 red chilies (adjust according to spice preference)
  • 2 bird’s eye chilies (adjust according to spice preference)

Instructions:

  1. Boil the Chicken Feet: In a pot, boil the cleaned chicken feet until tender, about 10 minutes. Drain and set aside.

  2. Sauté the Spice Paste: Heat some cooking oil in a pan over medium heat. Sauté the spice paste until fragrant. Add the lemongrass, bay leaves, and galangal, continue sautéing until aromatic.

  3. Cooking Process: Pour in water to the pan, then add the boiled chicken feet. Season with salt, sugar, and white pepper according to taste. Add the quartered tomato. Simmer until the sauce thickens and the flavors meld together.
