Carrot Chicken Nuggets

Ingredients:

  • 1/4 kg boneless chicken breast
  • 3 cloves garlic, grated
  • 2 tbsp cornstarch
  • 3 tbsp tapioca flour
  • 1 stalk green onion, finely chopped
  • 1 medium carrot, grated (using a cheese grater)
  • 2 eggs
  • 2 eggs for coating
  • Sugar, to taste
  • Salt, to taste
  • Chicken bouillon powder, optional
  • 1/2 nutmeg, finely ground
  • Approximately 175cc ice water
  • Breadcrumbs, as needed
  • Margarine, as needed for greasing

Instructions:

  1. Prepare the Mixture: In a blender, combine cornstarch, tapioca flour, grated garlic, salt, chicken bouillon powder (if using), sugar, ground nutmeg, chopped green onion, grated carrot, boneless chicken breast, 2 eggs, and ice water. Blend until the mixture is smooth and well combined.

  2. Taste and Texture Check: To check the taste and texture, fry a small amount of the mixture. The texture should be neither too runny nor too thick.

  3. Prepare the Steaming Dish: Grease a steaming dish with margarine to prevent sticking. Pour the mixture into the dish. Tip: Detach the bottom part of the blender and pour the mixture directly into the dish to avoid spills.

  4. Steam the Nuggets: Heat a steamer. Once hot, steam the mixture until half-cooked, then reduce the heat. Perform a skewer test to check if the mixture is cooked through.

  5. Cool and Slice: Allow the steamed mixture to cool slightly. Once cool, slice it into desired nugget shapes. Grease the knife with margarine to prevent sticking.

  6. Coat the Nuggets: Beat the remaining 2 eggs in a bowl. Dip each nugget slice into the beaten eggs, then coat with breadcrumbs. To ensure an even coating, shake the bowl gently.

  7. Chill the Nuggets: Place the coated nuggets in the refrigerator to help the breadcrumbs adhere better. After chilling, transfer them to an airtight container and freeze. These nuggets can last up to a week in the freezer, though they might be devoured within a day!

  8. Fry the Nuggets: When ready to serve, fry the nuggets in enough oil until they turn golden brown.
