Ingredients:

  • 2 fillets of kakap fish, cut into chunks (not too small)
  • 3 cups water
  • 5 shallots
  • 3 cloves garlic
  • 1 candlenut
  • 1 onion
  • 2 large green chilies
  • 5 green bird’s eye chilies
  • 1 devil’s chili (extremely spicy variety)
  • 1 tomato
  • 1 carrot
  • Juice of 1/2 lime
  • 2 tbsp curry powder (Desaku brand recommended)
  • 1 stalk spring onion
  • 1 stalk celery
  • Salt, to taste
  • Sugar, to taste
  • Cooking oil

Steps:

  1. Rinse the kakap fillets thoroughly and marinate with a little lime juice.
  2. Coarsely grind shallots, garlic, and candlenut in a mortar and pestle.
  3. Slice carrot, chilies, tomato, onion, spring onion, and celery.
  4. Sauté the ground spices until fragrant. Add onion and chilies, sauté until wilted.
  5. Add carrot, water, and kakap fillets. Stir in curry powder, salt, and sugar.
  6. Once boiling, add tomato and lime juice. Cook until the kakap is fully cooked.
  7. Add spring onion and celery.
  8. Adjust seasoning to taste. When satisfied with the taste, remove from heat and serve.
  9. Garnish with fried shallots.
