Spicy Rica Rica Chicken with Bird’s Eye Chili
Ingredients:
- 500 grams chicken, cut into preferred pieces
- 1 handful of red Bird’s Eye chilies (or Devil’s chilies)
- 4 kaffir lime leaves
- 2 stalks lemongrass, bruised
- 5 shallots
- 3 cloves garlic
- Salt, sugar, seasoning powder, cooking oil, to taste
- Turmeric, to taste
- Water, as needed

Prepare the Ingredients:
- Grind together turmeric, chilies, shallots, and garlic into a smooth paste.

Fry the Chicken:
- Heat cooking oil in a pan and fry the chicken until golden brown. Set aside.

Cook the Spices:
- In the same pan, heat more oil and sauté the ground spice paste until fragrant. Add lemongrass and kaffir lime leaves. Stir until aromatic.

Simmer the Dish:
- Pour in a bit of water and let it come to a boil. Season with salt, sugar, and seasoning powder to taste.

Combine and Cook:
- Add the fried chicken into the spice mixture. Stir well until the chicken is well-coated and the sauce thickens.

Serve:
- Remove from heat and transfer to a serving dish. Serve hot.
