Ingredients
- 1 tablespoon olive oil
- 1/4 red bell pepper, diced
- 1/4 green bell pepper, diced
- 1/4 yellow bell pepper, diced
- 1/2 orange bell pepper, diced
- 2 plum tomatoes, diced
- 1 teaspoon chili powder
- 1 teaspoon dried oregano
- 1 mango, peeled and diced
- 1/3 cup fresh cilantro, chopped
- Juice of 1 lime
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack and cheddar cheese blend
- 2 large flour tortillas

In a skillet, heat olive oil over medium heat. Add diced tomatoes and sauté for 2 minutes until slightly softened.

Add diced bell peppers, onions, chili powder, and dried oregano to the skillet. Sauté for another 2 minutes until peppers are tender-crisp.

Stir in diced mango, chopped cilantro, and lime juice. Cook for an additional minute, then remove from heat and let the filling cool slightly.

Preheat the oven to 375°F (190°C). Lightly grease a baking sheet.

To assemble the quesadillas, spread half of the filling mixture evenly over one tortilla. Sprinkle half of the shredded cheese blend over the filling. Place the second tortilla on top.
