  • 1/2 chicken, cut into pieces
  • 5 shallots
  • 3 cloves garlic
  • 1.5 candlenuts
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • Cumin, to taste

  • 3 kaffir lime leaves, torn
  • 2 bay leaves (optional, if available)
  • 5 bird’s eye chilies, halved
  • 400 ml coconut milk

Instructions:

  1. Prepare the Spices:

    • In a mortar and pestle or a food processor, grind the shallots, garlic, and candlenuts into a smooth paste.
  2. Sauté the Spice Paste:

    • In a large pan, heat a little oil over medium heat. Sauté the spice paste until fragrant.
    • Add turmeric powder, cumin, coriander powder, lemongrass, salt, kaffir lime leaves, and bay leaves (if using). Continue to sauté for a few more minutes to release the flavors.
  3. Incorporate the Coconut Milk:

    • Pour in the coconut milk and stir well to combine with the spice paste.
    • Allow the mixture to come to a gentle boil, stirring occasionally.
  4. Cook the Chicken:

    • Add the chicken pieces to the pan, ensuring they are fully submerged in the coconut milk mixture.
    • Reduce the heat to a simmer and cook until the chicken is tender and the flavors have melded together, about 30-40 minutes. Stir occasionally to prevent sticking and ensure even cooking.
  5. Final Touch:

    • Add the halved bird’s eye chilies to the pan. Continue to cook for an additional 5 minutes.
  6. Serve:

    • Once the chicken is cooked through and the sauce has thickened to your liking, remove from heat.
