Crispy Tuna with Salted Egg Sauce Recipe
Ingredients:
- 500g tuna fillet, cut into chunks
- 200g all-purpose flour
- 3 tbsp tapioca flour
- 3 salted egg yolks
- 1 medium-sized onion, finely chopped
- 5 cloves garlic, minced
- 10 green chilies, sliced
- 5 bird’s eye chilies (optional for extra heat), chopped
- 1 lime
- 20-25 curry leaves
- Butter and oil for frying
- Salt and pepper to taste
- Sugar to taste

- In a bowl, mix all-purpose flour and tapioca flour with a pinch of salt.
- Coat the tuna chunks evenly with the flour mixture.
- Heat oil in a frying pan over medium-high heat. Fry the tuna until golden and crispy. Set aside on a paper towel-lined plate to drain excess oil.

- Using a fork, mash the salted egg yolks until slightly smooth. Add a little water if needed to achieve a paste-like consistency.
- In a separate pan, melt butter with a little oil over medium heat. Add chopped onion, garlic, green chilies, bird’s eye chilies (if using), and curry leaves. Sauté until fragrant.

- Add the mashed salted egg yolks into the sautéed mixture. Stir well.
