Crispy Terasi Fried Chicken Recipe

Ingredients:

  • 1 whole chicken, cut into 12 pieces, washed and drained
  • Marinade:
    • 7 cloves garlic, minced
    • 1.5 inches ginger, minced
    • 1.5 tbsp sesame oil
    • 1 tbsp oyster sauce
    • 2 tbsp soy sauce
    • 1/2 tsp ground pepper
    • 2 tbsp cornstarch
    • 5 small packets shrimp paste (terasi), toasted and ground
    • 1/2 tsp mushroom bouillon
  • Coating Mixture:
    • 4 tbsp cornstarch
    • 2 tbsp tapioca flour
    • 1 tbsp all-purpose flour
    • 1 tbsp rice flour
    • 1/2 tsp baking powder

Instructions:

  1. In a bowl, combine garlic, ginger, sesame oil, oyster sauce, soy sauce, ground pepper, cornstarch, shrimp paste, and mushroom bouillon. Mix well.

  2. Add the chicken pieces to the marinade, ensuring they are evenly coated. Refrigerate for at least 1 hour, or preferably overnight for maximum flavor absorption.

  3. Prepare the coating mixture by combining cornstarch, tapioca flour, all-purpose flour, rice flour, and baking powder in a shallow dish.

  4. Remove the marinated chicken from the refrigerator. Dip each piece into the coating mixture, ensuring it is thoroughly coated.

  5. Heat oil in a frying pan over medium heat. Fry the chicken pieces until golden brown and cooked through. Remove from oil and drain on paper towels.

  6. Serve the crispy terasi fried chicken hot and enjoy!

Note: The original recipe includes 50 ml of water, but it’s skipped here because the chicken releases enough moisture during marination.
