Title: Shredded Mackerel with Basil Leaves

Ingredients:

  • 6 pieces mackerel fillets
  • 7 sprigs basil leaves
  • 1 bay leaf
  • 1 segment galangal, smashed
  • 2 large red chili peppers, sliced
  • Spice Paste:
    • 30 bird’s eye chilies
    • 7 red chilies
    • 5 shallots
    • 2 cloves garlic
    • 1 candlenut
    • salt, to taste

Instructions:

  1. Rinse the mackerel fillets under running water, then shred them.
  2. Pluck and rinse the basil leaves thoroughly.
  3. Slice the large red chili peppers.
  4. Sauté the spice paste, galangal, and bay leaf until fragrant.
  5. Add the sliced red chili peppers, stir until slightly wilted.
  6. Add the shredded mackerel.
  7. Pour in enough water, stir until the spices are evenly distributed, and let it simmer until the liquid reduces by half.
  8. Add the basil leaves, stir until the flavors are absorbed and the liquid reduces.
  9. Adjust the seasoning, then remove from heat and serve.
