Ingredients:
- 6 pieces mackerel fillets
- 7 sprigs basil leaves
- 1 bay leaf
- 1 segment galangal, smashed
- 2 large red chili peppers, sliced
- Spice Paste:
- 30 bird’s eye chilies
- 7 red chilies
- 5 shallots
- 2 cloves garlic
- 1 candlenut
- salt, to taste
Instructions:
- Rinse the mackerel fillets under running water, then shred them.
- Pluck and rinse the basil leaves thoroughly.
- Slice the large red chili peppers.
- Sauté the spice paste, galangal, and bay leaf until fragrant.
- Add the sliced red chili peppers, stir until slightly wilted.
- Add the shredded mackerel.
- Pour in enough water, stir until the spices are evenly distributed, and let it simmer until the liquid reduces by half.
- Add the basil leaves, stir until the flavors are absorbed and the liquid reduces.
- Adjust the seasoning, then remove from heat and serve.
