Grilled Gurame with Sweet Soy Sauce

Ingredients:

  • 1 gurame fish, cleaned and scaled
  • Spice Paste:
    • 1 cm turmeric
    • 1 cm ginger
    • 2 cloves garlic
    • 1 candlenut
    • 1 tsp coriander seeds
    • 1 tsp salt
  • Basting Sauce:
    • 1 tbsp margarine
    • Sweet soy sauce (kecap manis), as needed
    • 1 tsp MSG (optional)
    • 1/2 tsp ground pepper
    • 1 tsp oyster sauce

Instructions:

  1. Clean the fish thoroughly, removing scales under running water. Make several incisions on each side of the fish.

  2. Prepare the spice paste by grinding turmeric, ginger, garlic, candlenut, coriander seeds, and salt into a smooth paste.

  3. Rub the spice paste all over the fish, inside and out. Marinate the fish in the refrigerator for at least 1 hour, allowing the flavors to penetrate.

  4. Preheat the grill or oven to medium-high heat.

  5. In a small bowl, mix margarine, sweet soy sauce, MSG (if using), ground pepper, and oyster sauce to create the basting sauce.

  6. Grill the fish until cooked through, turning occasionally and basting generously with the sauce until all sides are well-coated and the fish is tender.

  7. Once cooked, remove from the grill and drizzle with additional sweet soy sauce. Serve hot with your favorite sambal terasi (shrimp paste chili sauce) or kecap manis, alongside sautéed water spinach. Enjoy the delightful flavors reminiscent of a restaurant-quality dish!
