Indonesian Spicy Chicken (Ayam Sambal Balado)
Ingredients:
- 1 whole chicken
- 4 shallots
- 3 garlic cloves
- 4 large red chilies
- 20 bird’s eye chilies (cabe rawit)
- 3 candlenuts (kemiri)
- 1 small piece of turmeric
- Salt, to taste
- MSG (optional)
- Sugar, to taste
- Chicken stock powder (Royco Ayam), to taste
Instructions:

Prepare the Chicken:
- Grind 1 garlic clove, 3 candlenuts, and turmeric with a pinch of salt until smooth. Rub this mixture all over the chicken.
- Place the chicken in a pot, cover with water, and boil until cooked through. Remove the chicken and let it cool.

Make the Sambal Balado:
- Grind all the red chilies, bird’s eye chilies, shallots, and remaining garlic cloves with salt until smooth.

Fry the Chicken:
- Heat a little oil in a pan and fry the boiled chicken until golden brown and cooked thoroughly.

Combine and Serve:
- In another pan, heat a bit of oil and sauté the sambal balado mixture until fragrant.
- Add the fried chicken into the sambal balado mixture. Stir well to coat the chicken evenly.
- Season with a bit of chicken stock powder (Royco Ayam), adjusting salt and sugar to taste.

- Ayam Sambal Balado is best served hot with steamed rice.
