Chicken and Carrot Nuggets

Ingredients:

  • 250 grams chicken breast
  • 3 tablespoons all-purpose flour
  • 2 tablespoons tapioca flour
  • 2 large eggs
  • 5 cloves garlic
  • 1/2 teaspoon sugar
  • 1 teaspoon salt
  • 1 medium carrot
  • 1 stalk celery
  • 1 stalk green onion
  • 1 teaspoon ground black pepper
  • For coating:
    • 1 small pack of Sajiku seasoning mix
    • Breadcrumbs or panko
    • Water as needed

Instructions:

  1. Prepare the Ingredients:

    • Begin by finely blending the chicken breast and garlic cloves until you achieve a smooth consistency. If you prefer, you can use a food processor for this step.
    • Grate the carrot using a cheese grater and set it aside.
    • Thinly slice the celery and green onion.
  2. Mix the Ingredients:

    • In a large bowl, combine the blended chicken and garlic mixture with the eggs, grated carrot, and all the other ingredients including the all-purpose flour, tapioca flour, sugar, salt, and ground black pepper.
    • Mix everything thoroughly until all ingredients are well incorporated and the mixture is evenly combined.
  3. Prepare the Steaming Pan:

    • Preheat your steamer or prepare a pot for steaming.
    • Lightly grease a small baking dish or heat-resistant pan with Blue Band or any other butter substitute.
  4. Steam the Mixture:

    • Pour the chicken mixture into the prepared pan and smooth it out with a spoon to ensure an even layer.
    • Place the pan into the preheated steamer and steam for about 20 minutes, or until fully cooked and firm.
  5. Cool and Cut:

    • Once cooked, remove the pan from the steamer and let it cool slightly.
    • Cut the steamed mixture into nugget-sized pieces.
  6. Coat and Freeze:

    • Prepare your coating station by setting up a small pack of Sajiku seasoning mix and breadcrumbs or panko in separate dishes.
    • Dip each nugget into the Sajiku seasoning mix, then coat it with breadcrumbs, making sure each piece is well-covered.
    • If you plan to store them for later, arrange the coated nuggets on a baking sheet and freeze until solid. Once frozen, transfer the nuggets to a freezer-safe bag or container for easy storage.
  7. Cooking Tips:

    • For a crispier texture, you can pan-fry the coated nuggets in a small amount of oil over medium heat until golden brown on all sides.
    • These nuggets make a great snack or can be served with your favorite dipping sauces.
