Ingredients

For the Crispy Chicken:

  • 500 grams chicken fillet, cut into cubes
  • Salt and pepper, to taste
  • 5 tablespoons milk
  • Kobe seasoned flour (for breading)

For the Salted Egg Sauce:

  • 5 salted egg yolks
  • 4 cloves garlic, finely chopped
  • Cooking oil
  • 200 ml milk
  • 7 red chilies

Instructions

  1. Prepare the Chicken:

    • In a mixing bowl, combine Kobe seasoned flour with salt and pepper. Gradually add milk to form a smooth batter.
    • Add the chicken cubes to the batter, ensuring each piece is well-coated. Cover and refrigerate for about 30 minutes to allow the flavors to meld.
  2. Bread the Chicken:

    • Remove the marinated chicken from the refrigerator. Place Kobe seasoned flour (without adding water) into a shallow dish.
    • Dredge each piece of chicken in the seasoned flour, ensuring an even coating.
  3. Fry the Chicken:

    • Heat oil in a frying pan over medium heat. Fry the chicken pieces until they are golden brown and crispy. Drain on paper towels.
  4. Prepare the Salted Egg Sauce:

    • In a bowl, mash the salted egg yolks and mix with 5 tablespoons of milk until smooth.
    • Heat a little oil in a pan and sauté the garlic and red chilies until fragrant.
    • Add the mashed salted egg mixture to the pan, stirring until it starts to bubble.
  5. Combine and Serve:

    • Pour in 200 ml of milk and mix until the sauce is well-blended and slightly thickened.
    • Gently toss the crispy chicken pieces in the salted egg sauce, ensuring they are evenly coated. Adjust seasoning as needed.
