Ayam Richeese Fire Wings with Cheese Sauce

Ingredients:

For the Chicken Wings:

  • 1/2 kg chicken wings
  • 1 packet of seasoned flour (e.g., Sasa brand)

For the Spicy Sauce:

  • 3 cloves garlic, crushed
  • 4 tablespoons chili sauce
  • 2 tablespoons tomato ketchup
  • 4 tablespoons barbecue sauce (optional, omit if not using)
  • 1 teaspoon sesame oil (optional)
  • 1 tablespoon oyster sauce
  • 1 tablespoon honey (or substitute with sugar)
  • 1/2 teaspoon salt (or to taste)
  • 1 tablespoon Bon Cabe (level 30, adjust to your heat preference)

For the Cheese Sauce:

  • 100 ml UHT milk (or reconstituted powdered milk)
  • Grated cheddar cheese, as needed
  • 1 sachet of Indofood cheese powder (typically used for french fries)
  • 1 teaspoon cornstarch dissolved in a little water
  • 1 tablespoon margarine

Instructions:

  1. Prepare the Chicken Wings:

    • Clean the chicken wings thoroughly and cut them into two pieces each.
    • Coat the chicken wings with the seasoned flour according to the package instructions.
    • Heat oil in a deep fryer or skillet, and fry the chicken wings until they are crispy and golden brown. Remove and drain on paper towels.
  2. Make the Spicy Sauce:

    • In a pan, heat margarine and sauté the crushed garlic until fragrant.
    • Add chili sauce, tomato ketchup, oyster sauce, salt, and honey to the pan. Stir well.
    • If using, add barbecue sauce and sesame oil. Adjust the spiciness with Bon Cabe according to your taste.
    • Simmer the sauce until it thickens. Taste and adjust seasoning as needed.
  3. Combine Chicken with Spicy Sauce:

    • Add the fried chicken wings to the pan with the spicy sauce. Toss to coat the wings evenly in the sauce.
  4. Prepare the Cheese Sauce:

    • In a saucepan, melt margarine over low heat.
    • Slowly add the UHT milk (or reconstituted powdered milk) while stirring.
    • Incorporate the grated cheddar cheese and continue to stir until melted and smooth.
    • Add the Indofood cheese powder for added flavor and brightness.
    • Stir in the cornstarch mixture and cook until the sauce thickens and becomes bubbly.
  5. Serve:

    • Serve the spicy chicken wings hot, topped with the creamy cheese sauce.
    • Garnish with toasted sesame seeds if desired.
