Salmon Head Soup

Ingredients:

  • 2 salmon heads
  • 2 limes, juiced
  • 5 shallots, thinly sliced
  • 5 cloves garlic, crushed and sliced
  • 1-inch piece fresh turmeric, crushed
  • 1-inch piece fresh ginger, crushed
  • 3 bay leaves
  • 3 kaffir lime leaves
  • 5 bird’s eye chilies
  • 3 starfruit, sliced
  • 2 scallions, chopped
  • Salt, to taste
  • Pepper, to taste
  • Optional: a dash of seasoning powder (such as Royco)

Instructions:

  1. Prepare the Salmon Heads:

    • Clean the salmon heads thoroughly and rub them with lime juice and a pinch of salt. Set aside.
  2. Sauté the Aromatics:

    • In a large pot, heat a small amount of oil over medium heat. Add the sliced shallots, crushed garlic, fresh turmeric, and fresh ginger. Sauté until the mixture becomes fragrant and the shallots turn translucent.
  3. Cook the Starfruit:

    • While the aromatics are cooking, place the sliced starfruit in a separate pot with enough water to cover them. Bring to a boil and cook until tender.
  4. Combine Ingredients:

    • Once the starfruit is cooked, add it to the pot with the sautéed aromatics. Stir well to combine.
  5. Add the Salmon Heads:

    • Gently add the prepared salmon heads to the pot. Stir to incorporate them into the mixture.
  6. Season the Soup:

    • Season the soup with salt and pepper to taste. If you prefer, add a dash of seasoning powder (such as Royco) for extra flavor.
  7. Simmer:

    • Let the soup simmer until the salmon heads are cooked through and the flavors have melded together, about 20-30 minutes.
  8. Serve:

    • Garnish with chopped scallions and serve hot.
