- 1/2 teaspoon ground black pepper
- 1/2 teaspoon ground coriander
- Salt, sugar, and mushroom stock powder to taste

Instructions:

Prepare the Fish: Clean the mackerel thoroughly and cut it into three pieces each. Heat oil in a pan and fry the fish pieces until they are cooked through and golden brown. Set aside.

Blend the Spices: In a blender or food processor, grind the shallots, garlic cloves, candlenuts, turmeric, ginger, and galangal into a smooth paste.

Cook the Spice Paste: Heat a little oil in a pan over medium heat. Add the blended spice paste and sauté until fragrant and the oil starts to separate from the paste.
-
Add Aromatics: Toss in the bay leaves, kaffir lime leaves, and galangal pieces. Stir well to combine with the spice paste.
-
Cook the Carrots: Add the carrot slices to the pan and pour in enough water to cover the carrots. Cook until the carrots are tender.
-
Season the Sauce: Season the mixture with salt, sugar, and mushroom stock powder according to your taste. Adjust the seasoning as needed.
-
Combine Fish and Sauce: Gently fold in the fried fish pieces and the sliced tomato. Stir to ensure that the fish is evenly coated with the spiced sauce.
