Ikan Kembung Bumbu Kuning (Yellow Spiced Mackerel)

Ingredients:

  • 3 large mackerel fish, cut into 3 pieces each
  • 1 carrot
  • 5 shallots
  • 4 garlic cloves
  • 6 candlenuts
  • 2 segments turmeric
  • 1 segment ginger
  • 2 segments galangal
  • 2 kaffir lime leaves
  • 2 bay leaves
  • 1 stalk green onion
  • 1/2 tomato
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground coriander
  • Salt, sugar, and mushroom stock powder to taste
  • Oil and water as needed

Instructions:

  1. Prepare the Fish: Clean the mackerel thoroughly and cut it into three pieces each. Heat oil in a pan and fry the fish pieces until they are cooked through and golden brown. Set aside.

  2. Blend the Spices: In a blender or food processor, grind the shallots, garlic cloves, candlenuts, turmeric, ginger, and galangal into a smooth paste.

  3. Cook the Spice Paste: Heat a little oil in a pan over medium heat. Add the blended spice paste and sauté until fragrant and the oil starts to separate from the paste.

  4. Add Aromatics: Toss in the bay leaves, kaffir lime leaves, and galangal pieces. Stir well to combine with the spice paste.

  5. Cook the Carrots: Add the carrot slices to the pan and pour in enough water to cover the carrots. Cook until the carrots are tender.

  6. Season the Sauce: Season the mixture with salt, sugar, and mushroom stock powder according to your taste. Adjust the seasoning as needed.

  7. Combine Fish and Sauce: Gently fold in the fried fish pieces and the sliced tomato. Stir to ensure that the fish is evenly coated with the spiced sauce.

  8. Serve: Once everything is well-mixed and heated through, remove from heat. Transfer to a serving dish and garnish with chopped green onions if desired. Serve hot and enjoy!
