- 250 grams of bean sprouts, cleaned and blanched with hot water

- 10 shallots
- 4 garlic cloves
- 1/2 tablespoon ground black pepper
- 1 small piece of ginger
- 1 small piece of turmeric
- 3 candlenuts, roasted
- 2 kaffir lime leaves
- 1 bay leaf
- 1 small stalk of lemongrass, bruised

- 4 garlic cloves, bruised
- Chicken skin or fat (as needed)
- 100 cc vegetable oil

- Blend the shallots, garlic, black pepper, ginger, turmeric, and roasted candlenuts into a smooth paste.
- Heat vegetable oil in a pan and sauté the spice paste until fragrant and golden brown.
- Add the bay leaf, kaffir lime leaves, and bruised lemongrass. Stir well to combine.
- Add the shredded chicken to the pan and mix thoroughly with the spices.

- Pour in the chicken broth and season with sweet soy sauce, salt, sugar, and chicken bouillon powder.

- Adjust seasoning to taste and remove from heat. Set aside.
