Spicy Tuna with Kemangi (Indonesian Style)

Ingredients:

  • 6 pieces of tuna
  • 1 lime
  • 6 shallots
  • 3 garlic cloves
  • 10 curly chilies
  • 8 bird’s eye chilies (adjust to taste)
  • 1 tomato
  • Salt and sugar to taste
  • 1/2 teaspoon shrimp paste (fried beforehand)
  • 4 sprigs of kemangi leaves (only the leaves)
  • 1 kaffir lime leaf
  • 100 ml water

Instructions:

  1. Prepare the Tuna:

    • Clean the tuna pieces thoroughly and rub them with lime juice. Let them marinate for 15 minutes to infuse the flavors and tenderize the fish.
  2. Cook the Tuna:

    • Fry the marinated tuna in a hot pan until cooked through. Be careful not to overcook it; the tuna should remain moist and tender.
  3. Prepare the Spice Paste:

    • In a mortar and pestle, grind the shallots, garlic, curly chilies, bird’s eye chilies, and tomato until you achieve a smooth paste. If you don’t have a mortar and pestle, you can use a blender for this step.
  4. Cook the Spice Paste:

    • Heat a little oil in a pan and sauté the ground spice paste until it becomes fragrant. Add the kaffir lime leaf to the pan for an additional layer of flavor.
  5. Combine and Simmer:

    • Pour the water into the pan with the spice paste and bring it to a boil. Season with salt and sugar to taste. Stir well to combine the flavors.
  6. Add the Tuna:

    • Add the fried tuna pieces into the pan. Gently stir to coat the tuna with the spice mixture. Allow it to cook until the sauce thickens slightly and the flavors meld together.
  7. Finish with Kemangi:

    • Add the kemangi leaves and stir until they wilt. This will give the dish a fresh, aromatic touch.
  8. Adjust the Flavor:

    • Taste the sauce and adjust the seasoning if necessary. If everything tastes just right, remove the pan from the heat.
  9. Serve:
