Ikan Patin Bumbu Kuning, a delightful Indonesian recipe, features patin fish simmered in a vibrant, aromatic yellow spice paste. This dish is perfect for those who enjoy bold flavors and traditional Southeast Asian cuisine. Here’s how to prepare this savory meal with a harmonious blend of spices and fresh ingredients.

Ingredients

For the Fish:

  • 2 whole patin fish (approximately 600 grams), cleaned and cut into desired pieces
  • 2 stalks lemongrass, smashed
  • 2 cm galangal, sliced thinly
  • 3 kaffir lime leaves
  • 2 bay leaves
  • 2 teaspoons granulated sugar
  • 2 limes, juiced
  • 1 handful of red and green bird’s eye chilies
  • 1 tablespoon tamarind juice
  • 1 liter water
  • Salt, to taste
  • Oil, for sautéing

For the Spice Paste:

  • 5 shallots
  • 3 garlic cloves
  • 2 cm ginger
  • ½ tablespoon turmeric powder
  • 1 small pack of ready-to-use coconut milk

Instructions

  1. Prepare the Fish:

    • Clean the patin fish thoroughly and cut into pieces as desired.
    • Rub the fish with salt and lime juice or tamarind juice. Let it marinate for about 15 minutes.
    • Rinse the fish with cold water and drain well.
  2. Make the Spice Paste:

    • In a blender or using a mortar and pestle, blend the shallots, garlic, ginger, and turmeric powder into a smooth paste.
  3. Sauté the Spice Paste:

    • Heat a bit of oil in a pan over medium heat. Add the spice paste and sauté until it becomes aromatic and well-cooked.
  4. Cook the Dish:

    • Add the sliced galangal, bay leaves, kaffir lime leaves, and lemongrass to the pan. Continue to sauté for a few more minutes until the lemongrass becomes slightly wilted.
    • Pour in 1 liter of water and bring it to a boil.
    • Once boiling, reduce the heat to medium and add the fish pieces along with the whole bird’s eye chilies.
    • Simmer until the fish is cooked through and has changed color.
  5. Add Coconut Milk and Seasonings:

    • Stir in the coconut milk and continue to cook until the sauce slightly reduces.
    • Season with salt and sugar to taste.
    • Finally, add the tamarind juice and give it a final stir.
  6. Serve:

    • Remove from heat and serve the Ikan Patin Bumbu Kuning hot, ideally with steamed rice or your favorite side dishes.
