Oriental Green Cabbage Salad Recipe

Looking for a refreshing, crunchy salad that’s perfect for potlucks or a quick brunch? This Oriental Green Cabbage Salad is a delightful combination of crisp cabbage, flavorful ramen noodles, and a tangy dressing that will have everyone asking for seconds. It’s a recipe I received from a co-worker who used to bring it to our workplace potlucks. I’ve fallen in love with this salad, and I’m excited to share it with you!

Ingredients

  • 1/2 head green cabbage, finely shredded
  • 2 green onions, chopped
  • 2 tablespoons sesame seeds
  • 2 tablespoons butter
  • 1/4 cup white vinegar
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 3/4 teaspoon white pepper
  • 1 teaspoon MSG (optional, for extra umami)

For the Crunch

  • 1 package ramen noodles, seasoning packet discarded
  • 1/4 cup slivered almonds (optional)

Instructions

  1. Prepare the Ramen Noodles: Begin by crumbling the ramen noodles into small pieces. You can do this by breaking them up with your hands or placing them in a plastic bag and giving them a gentle crush with a rolling pin.

  2. Cook the Noodles: In a skillet over medium-high heat, melt the butter. Once melted, add the crumbled ramen noodles to the skillet. Stir-fry the noodles for about 2 minutes, or until they are golden brown and crispy. Be sure to stir constantly to avoid burning them.

  3. Season the Noodles: Once the noodles are crispy, sprinkle the seasoning packet over them and mix well to coat. Transfer the seasoned noodles to a plate and let them cool completely.

  4. Prepare the Dressing: In a small bowl, whisk together the white vinegar, sugar, salt, white pepper, and MSG (if using). Continue whisking until the sugar and salt are fully dissolved and the mixture is well combined.

  5. Assemble the Salad: In a large bowl, combine the finely shredded cabbage and chopped green onions. Toss them together to ensure they are evenly mixed.

  6. Add the Dressing: Pour the prepared dressing over the cabbage and green onions. Toss well to ensure that the cabbage is thoroughly coated with the dressing. Let the salad sit for about 15 minutes to allow the flavors to meld together.

  7. Add the Crunch: Just before serving, add the cooled, crispy ramen noodles, sesame seeds, and slivered almonds (if using) to the salad. Give it a final toss to combine all the ingredients.

  8. Serve: Serve immediately to enjoy the salad while the noodles are still crispy. This salad is best served fresh, but you can store it in the refrigerator for a day or so if needed.

Notes

  • Customization: Feel free to add other crunchy toppings such as sunflower seeds or chopped nuts for extra texture.
  • Make Ahead: If preparing in advance, keep the crispy ramen noodles and salad components separate until ready to serve to maintain the crunchiness.
