Ingredients:
- 1 can of sardines (I use ABC brand)
- 4 shallots, finely sliced
- 2 cloves of garlic, finely sliced
- 1/2 inch piece of ginger, finely sliced
- 5 bird’s eye chilies, sliced (adjust to taste)
- Cooking oil
- Seasoning (optional, as per taste; I usually skip this)
- Salt, to taste

- Open the can of sardines and separate the fish from the accompanying sauce.

Fry the Sardines:
- Heat some cooking oil in a pan over medium heat. Fry the sardines until they are crispy and well-cooked. Although you can skip this step, frying the sardines adds a delightful texture and flavor.

- In a separate pan, heat a little oil and sauté the finely sliced shallots, garlic, and ginger until fragrant.

Cook the Seasoning:
- Add the reserved sardine sauce and the sliced chilies to the pan with the sautéed spices. Season with salt and optional seasoning if desired. Stir and cook until the mixture is well-blended and heated through.

- Place the fried sardines in a serving dish and pour the spicy seasoning over them.
