- 7 white bird’s eye chilies, adjust to taste
- 3 cloves garlic
- 1 thumb-sized piece ginger
- 2 tablespoons corn syrup

- 1 teaspoon oyster sauce
- 1 teaspoon sesame oil

- White pepper, to taste
- Mushroom seasoning, to taste
- Sesame seeds, toasted
- Green onions, finely sliced
- Cooking oil, as needed
Instructions
-
Prepare the Spice Mixture: Grind all the spice ingredients together until you achieve a smooth paste.
-
Sauté the Spices: Heat a little cooking oil in a pan over medium heat. Add the ground spice mixture and sauté until fragrant. If necessary, add a small amount of water to prevent burning and ensure even cooking.
-
Add the Chicken Feet: Incorporate the pre-boiled chicken feet into the pan. Mix well to ensure they are evenly coated with the spice mixture.
-
Cook to Perfection: Continue to cook the chicken feet for 30-40 minutes, or until they are tender and the liquid has mostly evaporated. Stir occasionally to prevent sticking.
-
Finishing Touches: Remove from heat. Sprinkle with toasted sesame seeds and finely sliced green onions for garnish.
-
Serve and Enjoy: Transfer to a serving plate and enjoy this spicy, flavorful Korean delicacy.
Additional Tips:
- Adjust Spiciness: If you prefer a milder dish, reduce the number of bird’s eye chilies or substitute with a milder variety of chili.
- Flavor Depth: For a deeper flavor, marinate the chicken feet in the spice mixture for a few hours before cooking.
- Accompaniments: Serve with steamed rice and a side of kimchi for a complete Korean meal experience.
