Steak Ayam with Black Pepper Sauce

Ingredients:

For the Chicken Steak:

  • 1/2 kg chicken breast fillet
  • 8 tablespoons all-purpose flour
  • Salt to taste
  • Black pepper to taste

For the Coating:

  • 3 tablespoons all-purpose flour
  • Water (enough to make a batter, not too runny)

For the Sauce:

  • 2 tablespoons margarine
  • 2 cloves garlic, finely chopped
  • 1 small onion, thinly sliced
  • 3 tablespoons black pepper sauce (Bamboe brand preferred)
  • 2 tablespoons oyster sauce
  • 1 teaspoon granulated sugar
  • 1 teaspoon teriyaki sauce
  • 2 tablespoons tomato sauce
  • Cornstarch slurry (to thicken, as needed)
  • Water (as needed)

For the Corn Stir-Fry:

  • 1 ear corn, kernels removed
  • 2 carrots, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon granulated sugar
  • 1 teaspoon oyster sauce
  • Salt to taste
  • White pepper to taste

Instructions:

  1. Prepare the Chicken:

    • Slice the chicken breast fillet into desired sizes. Flatten the pieces by gently pounding them with the back of a knife to make them even and wider.
    • Dip each piece of chicken into the wet flour batter.
    • Coat the chicken evenly with the dry flour mixture.
    • Fry the chicken in hot oil. Note: Once the oil is hot, reduce the heat to low to ensure the chicken cooks through without burning. Set the fried chicken aside.
  2. Make the Sauce:

    • Melt the margarine in a pan over medium heat. Add the finely chopped garlic and sliced onion, and sauté until fragrant and translucent.
    • Add the black pepper sauce, oyster sauce, granulated sugar, teriyaki sauce, and tomato sauce to the pan. Mix well.
    • Adjust the sauce’s consistency with cornstarch slurry and water as needed, stirring continuously until the sauce reaches your desired thickness. Taste and adjust seasoning as necessary.
  3. Prepare the Corn Stir-Fry:

    • In a separate pan, melt some margarine over medium heat. Add the corn kernels and diced carrots. Cook until they start to soften.
    • Season with garlic powder, granulated sugar, oyster sauce, salt, and white pepper. Stir well and cook until the vegetables are tender and well-coated with the seasonings. Taste and adjust seasoning if needed.
  4. Serve:

    • Arrange the fried chicken steaks on a serving platter and drizzle with the black pepper sauce.
    • Serve alongside the corn stir-fry.

Enjoy your delicious Steak Ayam with Black Pepper Sauce!
