Steak Ayam with Black Pepper Sauce
Ingredients:
For the Chicken Steak:

- 1/2 kg chicken breast fillet
- 8 tablespoons all-purpose flour
- Salt to taste
- Black pepper to taste
For the Coating:
- 3 tablespoons all-purpose flour
- Water (enough to make a batter, not too runny)
For the Sauce:
- 2 tablespoons margarine
- 2 cloves garlic, finely chopped
- 1 small onion, thinly sliced
- 3 tablespoons black pepper sauce (Bamboe brand preferred)
- 2 tablespoons oyster sauce
- 1 teaspoon granulated sugar
- 1 teaspoon teriyaki sauce
- 2 tablespoons tomato sauce
- Cornstarch slurry (to thicken, as needed)
- Water (as needed)
For the Corn Stir-Fry:
- 1 ear corn, kernels removed
- 2 carrots, diced
- 1 teaspoon garlic powder
- 1 teaspoon granulated sugar
- 1 teaspoon oyster sauce
- Salt to taste
- White pepper to taste
Instructions:

Prepare the Chicken:
- Slice the chicken breast fillet into desired sizes. Flatten the pieces by gently pounding them with the back of a knife to make them even and wider.
- Dip each piece of chicken into the wet flour batter.
- Coat the chicken evenly with the dry flour mixture.
- Fry the chicken in hot oil. Note: Once the oil is hot, reduce the heat to low to ensure the chicken cooks through without burning. Set the fried chicken aside.

Make the Sauce:
- Melt the margarine in a pan over medium heat. Add the finely chopped garlic and sliced onion, and sauté until fragrant and translucent.
- Add the black pepper sauce, oyster sauce, granulated sugar, teriyaki sauce, and tomato sauce to the pan. Mix well.
- Adjust the sauce’s consistency with cornstarch slurry and water as needed, stirring continuously until the sauce reaches your desired thickness. Taste and adjust seasoning as necessary.

Prepare the Corn Stir-Fry:
- In a separate pan, melt some margarine over medium heat. Add the corn kernels and diced carrots. Cook until they start to soften.
- Season with garlic powder, granulated sugar, oyster sauce, salt, and white pepper. Stir well and cook until the vegetables are tender and well-coated with the seasonings. Taste and adjust seasoning if needed.

Serve:
- Arrange the fried chicken steaks on a serving platter and drizzle with the black pepper sauce.
- Serve alongside the corn stir-fry.
